Fiesta Chicken (Crock-pot)


Hello everyone! Today I made a delicious and easy slow-cooker (crock-pot) recipe. Here is the recipe:

Fiesta Chicken!

2 lbs chicken breast (uncooked/raw)
2 cans diced tomatoes (I used fire-roasted diced tomatoes); not drained we'll use this juice
1 can kernel corn, drained
1 can black beans, drained and rinsed
1 packet McCormick Fiesta Chicken powder mix, for slow-cooker
(Walmart)

Preparation


  1. Apply olive oil to the inside of the crock-pot. Make sure you apply it on the walls too, and this is to prevent the food from getting stuck.
  2. Put the chicken in the crock-pot. (do not turn on the pot just yet)
  3. In a separate bowl, mix the beans (rinsed), the corn (drained), the tomatoes w/juice, and the Fiesta Mix) Mix well!
  4. Pour this sauce on the chicken. Turn on the crock-pot and set it to HIGH for 4 hours. 
  5. After 4 hours, slightly stir all the ingredients. Cook on LOW for 3 more hours.
  6. Taste and fix if salt is needed. Careful, it will be really HOT!


You can enjoy this recipe over steamed rice, or in flour tortillas (burrito), or over nachos!!

This recipe is great because it allows you continue working on homework and study (or do the laundry), and you will have plenty of food for at least 4 days!!
